From Puglia,
with patience.

My grandmother Bella opened her first trattoria in Fasano in 1954. A single dining room, twelve seats, one menu that changed with the season. When my father emigrated to Manchester, he brought her recipe cards with him.

We opened Osteria Bella in 2017 to keep that kitchen alive. The pasta is still made by hand every morning. The ragù still cooks for five hours. Some things aren't worth rushing.
